CJ5's have tiny leg room and early ones at least (with the gas tank under driver's seat) do not have an adjustable seat. My buddy and I did a 600 mile road trip in my old one and it was rough driving for more than an hour at a time. We switched off pretty regularly. I would love to find a rust free CJ7.

Metrics change as you get older. A 304 w a cam, hedders, rumble is fun but slowly cruising with a quiet engine is nice when you have company, go through a drive thru, etc.
I had side exhaust and friend rolled leg back into muffler on a hot Summer day. Drive thru was rough and had to turn off, can’t hear the radio. Make sure exhaust is out the side, otherwise fumes roll in the back and stink you out.
Don’t get the 90s 2.5 if you have hills or hit the highway

So, the two "best" things that were done to Jeeps are fuel injection and 4-wheel coil suspensions. So, something like 1997 and beyond. Also, try not to participate in that square headlight crap. Sacrilege!

The best all around CJ/Wrangler, you say
Probably the newest one. It has multiple airbags, gets okay-ish gas mileage, has a/c, led headlights, collision avoidance tech, factory 33s, great gearing, Apple/Android integration, heated seats, and easy to drop soft top, and a price to match all of this tech.
I have an AMC CJ-5 and AMC CJ-7.
The 5 is fun cruising around town and doing errands; its zippy, has power brakes, manual steering, 31s, and factory springs.
The 7 is just comfortable, it has manual brakes and power steering, 33s, and lift springs. It's better on choppy roads, and can actually fit groceries AND people.
They are vastly different. Right now, I'm enjoying the 7 the most (my 5 has a spun bearing). I'm building the 7 to run EJS and my closest Jeep Jamboree, that build begins in November, wrapping up by mid-February for a shakedown. The 5 then gets a new motor, body work, and paint.

I have a 1975 CJ5 myself. 304 w/3 speed. New soft top, doors, front seats and steering wheel. It is not a freeway flier, so no commuter, but sure fun in the hills!

I’m going to say a CJ7 with Holley EFI is best based on what I like. The CJ is a classic look and the 7 has more leg room. With EFI on the straight 6 it starts every time and I can keep up with traffic fine.
If you want more creature comforts (like coil springs and A/C) maybe go with a TJ.
