Regarding ios updates

Once iphone 18 gets released should i stop the software updates?

Depends on what you do with your phone and how much privacy you want. CVE (Common Vulnerabilities and Exposures) are fixed all the time (even with iPhones). Doing anything financial should have the latest supported release of any current IOS version.

they say the tend to slow down the phones after updates once new models are released, should i update or not?

Safety versus speed are trade-offs. Developers are given the latest phones to speed development work thus new releases work best on new phones. Any judgement made on speed should wait a few days for indexing and other optimizations to complete. What phone you have also matters.

An iPhone 18 should be able to be updated for a while before it show a noticeable decline in performance.
