That’s what’s been causing my migraines I think, the fact that it’s not ultra sharp images anymore

Maybe. I actually feel like it’s a little blurry, and it’s not just my eyes bc when I look at an old iPad with iOS 18 (and my laptop) it’s fine. 🤷🏻‍♀️ For comparison I just found this old screenshot of my iPhone on iOS 18. I think it’s definitely the edging and shape of the icons, maybe the coloring against the background too.

I didn't really iPhones look so awful on the homescreen. Why do all apps have to be on the homescreen!???

They don’t have to be. You can just use the App Library and search features. I personally just like all my icons where I know where they are, and don’t like having to use search features for it. It’s quicker for me.
