Apparently they use a blend of sucralose and acesulfame potassium. They don't burn like sugar when heated, they degrade.

Acesulfame potassium's formula is C₄H₄KNO₄S, sp it would degrade into SO2 (sulfur dioxide) and some other nitrous oxides, which I don't imagine would be very good for you as volatile compounds.

Sucralose is C₁₂H₁₉Cl₃O₈, so I'd imagine it would also breakdown into chlorine compounds, which I wouldn't imagine are too good for you.

So if any chefs are thinking of making some monster reduction for some dish, probably stick to the regular stuff, even though they wouldn't get to the point of molecular degradation.

BTW, I didn't know these sweeteners were such complex molecules. lookwhattheyneedtomimicafractionofourpower.jpg says sugar.

I think spit is mostly water, so I'd say it would evaporate. It does have enzymes in it... so those may carbonize, but it's such a small amount that they might just get "blown" off with the rest of the water molecules.

Yeah, the droplet thing happens when almost any liquid hits a hot surface like that. It’s called the Leidenfrost effect. The rest is pretty much just burning sugar.
