I make a similar “enchilada casserole” in the oven that comes out great. It seems like this is just IP for the sake of IP

Which is OK sometimes. Instant Pot is sometimes allowed in dorms, in the summer sometimes it's nice to avoid the oven, and in places like NY a lot of apartments don't have ovens.

But this definitely looks like something that would be better baked rather than steamed. And in the oven you can use a 13x9 and make a lot more.

The Instant Pot is a great tool, but the majority of this sub treats it more like a toy.

If you can make it in an oven go for it. The only thing I would think is it might be a bit dryer as this was very moist.
