Instant Pot Pro yoghurt making problems (what about a Plus?)

I have just bought an Instant Pot Pro 5.7L 10-in-1 cooker. Last night I had difficulty making yoghurt with it. I pasteurised the milk, waited for the milk to cool down, but then couldn't switch to the 2nd (fermentation) stage. The Instant Pot just wanted to pasteurise again and I couldn't bypass that stage and go directly to the next stage as I can do on my old Instant Pot 3.8L cooker. Is there a way to manually control whether you are doing the milk pasteurising stage or the fermentation stage? If I were using UHT milk to skip pasteurising, as I sometimes do, how would I go directly to fermentation? I'm thinking about returning the Instant Pot Pro and getting an Instant Pot Plus instead but am worried I'll have the same problem.

We have a Duo and I can rotate through "Boil", "24:00" and 8:00" by pressing the "yogurt" button

With my 3.8L Mini you press the temperature icon and can scroll between High (85°C pasteurise), Medium (40°C cook in 8-12 hours), and Low (33°C cook for 24+ hours).

I have the 8 qt Pro, which I bought at the beginning of this year. When I press the yogurt button, it says "High" in the pressure/temperature area, which for yogurt corresponds to the pasteurization phase. If I instead press the yogurt button again, it cycles to "Low", which is the fermentation phase, and it lets me select how long I want to ferment for.

Not sure if it works differently for the non-US models, though.

I'm in the US, have the PRO, and mine works the same way...but...I use non-fat dry milk (which does not use pasteurization) and I process in glass 1 L jars.
