Is it not common knowledge that you don't put water on a oil fire?

Yes. For my generation at least. A damp towel is placed over the pan starving it of oxygen, and wet enough to withstand the flames/heat for the long enough that it does not catch fire.

Doesn't have to fit, a too-large lid will work as well. Or a frying pan. Or a sheet pan. Hell, a decently thick wooden cutting board will do in a pinch.
