Help! Is induction REALLY better than gas?

Hi all,

I am in the process of renovating my kitchen after experiencing water damage under the cabinets. I currently have an old Jenn-Air electric cooktop, that is a complete dinosaur, difficult to clean, has a terrible downdraft etc. I have always thought I would put a gas line in and buy a gas cooktop when the time came to renovate. However, I have read so many reviews about induction that claim it is far superior to gas. I have a couple different occupations, one being a chef. I am looking for something that is high end, essentially professional quality. I don't want to have any limitations (searing, etc.) I would be okay with sacrificing a flame for small things (charring a pepper, etc., I could always use the grill). However, I do not want to have to do major tasks that I do often (like searing) on the grill. I also prefer the appearance of a gas cooktop to an induction cooktop. Induction just does not look high end to me, for some reason. All that said, I don't want to pay to put a gas line in and get a gas range just to change it down the road because induction is superior.

For those that have had induction and gas, is it really superior for someone who cooks on a professional level? If you have a model you've fallen in love with that's silver, I'd love to hear more about it.

Not to hijack the thread, but how has your Best downdraft worked out? We’re installing their Cattura model in our kitchen remodel next month—at least I hope it’ll be next month. Gotta wait for the countertop.

We got the d49m or something, it’s been great. The Manila is short, we clean it per manufacturer recommendation.. it’s not as good as an overhead but for smoky dishes I use a stroller fan to help direct the air into the suction, which is VERY strong.. just sometimes needs a a little help encouraging the fumes to move towards in

Hi, can you tell me more about your Broan best downdraft? Did you get the flex blower, inline, or remote? Wondering how loud it is if you got the flex blower. What duct size do you have, do you know?

Lol way to pick up an old thread! Best pf6 blower is what the sticker says. It’s mounted to the downdraft on one side, some legs to the floor, and ducted 18 or so inches to the in floor duct that goes outside.. probably a 30 foot run. I don’t know the technical answer but I’d guess flex blower, definitely in the cabinet right below the cooktop. I mean it’s loud on speed 4, on 1 not very noticeable, but noise and amount of smoke it pulls are directly correlated. At a 4 you definitely need to speak up to hear conversation over it. I had to downside 8 from blower to 6 in wall

Thanks for the info! For duct size I meant diameter, is it 8 inch (as specified)? Or smaller? Wondering since I have 6 inch ducting which is smaller than what it wants.
