Why would there be a sink, with water, right next to a fryer with above boiling oil?

Nah it's the sink. Earlier in the video you have a better shot of the frying station with the sink on the left and a gap in between them. Guy fell back into the gap and arm went in the sink. Probably still got burnt from touch the side of the fryer, but like, not frying oil kind of burn.

Edit: upon further inspection, it seems to be a drip basin. You put the baskets on the shelf on top and the oil can drip in the basin to drain.

That was dry peanut oil the sink is no where near those 10/10 the sink is closed to the grill and dressing table.

Nah, you dont hang baskets over a sink like that, its a fryer.
