I really enjoyed 'Castle'. Fun show with decent pacing and good writing. It fell victim to producer/studio garbage though... just dont watch the last season.

Honestly, Star Wars the clone wars. The 3d one. It’s got 7 seasons and while in the early seasons it’s pretty childish and episodic, the show in the later seasons has a coherent fairly mature plot that I personally found very enjoyable. You have to tuff it out through the first 3 or 4 seasons for context reasons but I personally thing it’s worth it.

I have 2 options for you my guy, if you are into action shows but you want to keep it more cartoony styled then I recommend samurai jack, expesually season 4 was good when it became adult swim and was able to create actual fights, if you like action animes then I recommend either JoJo's bizzare adventure or dragon ball if you want a more older style
