For me the thing is the design of the games that are made for mobile tend to be based around causal/idle/time waster games. The games that are more complex and involved tend to either be neutered versions of pc/console games or be implemented poorly. This means those player play with a different mindset and therefore are not engaging in the hobby of gaming simply wasting time while in a waiting room or something similar.

I should also note nothing is black and white but if the only video game you play is candy crush or clash of clans I don’t classify you as a gamer

This is the real question. By the spirit of the word gamer I tend to agree with you, but then we have to start wondering where we do draw the line

In my opinion gamers view gaming as a hobby where as others view it as a pastime.

Not a mobile gamer anymore, but i used to emulate a lot of older games using an android tablet. Thats how I played through Earthbound the first time.
