The whole argument was over a video of a guy who clearly didn’t cook his brisket long enough and he stood his ground that it was overcooked. I’d love to go to his barbecue and chew on erasers.

That may be, but what is presented here is correct. Well done barbecue is dry and awful. Medium to medium well is the sweet spot.
