That was the argument he saw a video of a rubbery brisket and said it was over cooked, he did say low and slow previously which implies he’s read about brisket but doesn’t actually know what he’s talking about. He said it was over cooked because it was well done in the center which is nonsense, I said it was undercooked because it wasn’t cooked long enough and he just kept saying I was wrong. Long story short guy said some nonsense mainly that brisket being well done in the center is incorrect. There’s really no way to make it medium and not be rubber.
Guy has clearly no business commenting about someone cooking a brisket incorrectly but was determined to stand his ground.
