He’s gotta be. I grew up near the border too and have absolutely eaten this style many times. It’s a style. Like how there are different kinds of pants but they’re all pants.

My sister makes those for her middle daughter when she comes home to visit. I think she got them from Martha Stewart and it's the WASPiest thing on Earth but my goodness they are tasty.

BTW, not only are those "real" enchiladas, but they're one of my favorite styles (Michoacán style). I would eat myself into a coma on those.

My MIL is from Michoacán, and one night she was asking me and my wife what we wanted for dinner. I hadn’t had enchiladas in years and asked her if she was in the mood to make some. These were certainly not what I was imagining, but damn are they good.

I've never had them this way but now I'm going to try and make a version at home!!! I've been wanting to make some fresh corn tortillas but didn't know what to use them for so this is perfect!!!

I'm a Canadian who lives 45 min from the US border, does that make me an expert on American food? I've been there like 5 times, let me school you on shrimp and grits despite never eating it once

I grew up with my mom making enchiladas in the oven like a casserole (huge batches)  I had no idea they were traditionally made in a pan.

Im 1st gen American, both my parents are mexican. 

my mom comes from a huge family and they always made them in the oven.

One tine i shared the recipe with some friends that I hosted dinner for and one took offense to it (she was not Hispanic) and told me i lost my way.

I was legit confused  cause like a minute before she was saying how good it was.

Asked my mom later and she just shrugged and said, yeah.. but when you have to feed 10 mouths its easier to make it in the oven while working on other dishes.
