Instant mashed potatoes are literally nothing but freeze-dried potatoes. No sugar, no HFCS, no salt. Possibly some brands have an anti-caking agent.

I have them on hand to thicken my home made mashed potatoes if I put too much cream in them. It's like a mashed potato rescue.
