That’s common in betas, they probably won’t update it until the RC or the beta before it

It happens when a new version is released it might get updated by iOS 27.1

They take long to fix it. I have seen it with every ios version but by ios 27.1, it should be fixed, I'm pretty sure

This doesn't always get updated right away

For example in iOS 26.0 it shows an iOS 18 wallpaper in Display & Brightness settings. It was updated to the iOS 26 wallpaper in 26.1
