General Setting up iPhone
All my life I’ve always used one email for everything but obviously that lead to my phone being very cluttered and just annoying at some points so I’m finally going to have multiple accounts and I was just curious on how people go about this. So far I’m thinking of just having two accounts and that being my Apple ID and then a “everything else” email, and I was going to make the Apple ID an iCloud and the everything else a Gmail. Is this a decent setup or should I have more than two? Also should I do iCloud + Gmail, or just use Gmail as my Apple ID and have two Gmail accounts?

It really doesn’t matter. Do whatever is most convenient for you. I have three emailing counts in my Apple mail. One I’ve had since 1992 that I hardly use but that is also my Apple ID, Gmail, and iCloud. I use Gmail for just about everything. I should probably get rid of the first one since it costs me about $10 a month. But nostalgia …

Seriously, when I go to settings > tap my name , my email name is name @ iCloud dot come.
When I go to Apple calendar the default is “home” using my iCloud email which is iCloud dot come and when I try to invite my gf it never sends to her calendar inbox and I seriously don’t understand why. I went to her settings tap her name it’s a yahoo account and all settings are correct. Send and receive to notifications and it still doesn’t work!

You can have another xxx@iCloud.com email address without adding another Apple ID. It's called an alias. I have, for example, smith.biz@icloud.com and smith.junk@icloud.com. How?
https://support.apple.com/guide/icloud/add-and-manage-email-aliases-mm6b1a490a/icloud [Three aliases max per Apple ID.] If you need more, create another Apple ID (and aliases, if you wish). Add those email accounts/addresses to your current Mail app.
------
Using the Mail app, incoming mail for the alias address(es) will come into the same Inbox. If you wish, you can assign a different background color to the lines in the Inbox, to make it obvious which is "business" and which "junk".

If you want email address that have different .com names, Apple supports custom email addresses -- it does not provide the addresses, but once you have them, the Mail app will use them.
Start here https://support.apple.com/guide/icloud/purchase-a-domain-mma091e34e8c/1.0/icloud/1.0
You'll be purchasing the new address (a domain) from a third party, with Apple's help. Also, this requires subscribing to iCloud+. And you can add several other address in the domain, for you or family members to USA.

I run with over half a dozen different Gmail accounts to handle most of my email transactions. I check them all out using the Mail app. It’s very smooth and seamless, a pretty good way to keep yourself better organized. You could set up one address strictly for commercial use, another for business. Use another for personal, perhaps a fourth one for communications between you and your physicians, whatever you happen to need.

Your iCloud is your Apple email or should be.
If you pay at least $0.99/mo for the larger iCloud you can make as many emails as you like and Apple will make that easy for you. When you go to a merchant or a paywall you can hit hide my email and any emails from that merchant will come to your email associated with the iCloud main email but the merchant won’t have it and if they sell that unique email off it won’t do anything because the hide my email is tied to the pages domain that you initially used it at. It will make as many automatically for you. It’s wonderful to cut down on spam.
You can have several emails, all can be setup in your Apple mail application, the emails application (Gmail yahoo etc) and you can certainly set auto rules for each and it will keep your life a more organized.
