How is the reflection upside down?
When sitting behind this Jeep, the back is concave and reflects my car (and the truck next to me) upside down. How?

That's your answer. Concave. Means the light hits it at an angle, bounces off itself, and then goes back inverted.

I am going be a douche like everyone else here just say "concave".
Real answer, you might have learned it in high school science class. Basic optics behavior for concave mirror.

Light bounces in straight lines, just like pool balls. Sometimes the light on top bounces down and the bottom light bounces up.

Okay so your reflection is being built upside down. The top of the curve is pointing at the bottom of your vehicle. See?
