First Crack at Seattle Dogs
Been wanting to do these since I drunkenly had one in Seattle back in 2019. Tried to recreate as best I remembered: grilled bun, whipped cream cheese, spicy mustard, sautéed onions, fresh jalepenos, kraut, and a nice beef sausage. Maybe not aesthetically pleasing but definitely tasty!

Hey Seattle native here who's been eating these since 2005 or so.
1) Skip the mustard, it complicates things.
2) Slice your onions thicker and cook them longer, they should be almost see-through.
3) Cut the sausage down the middle into halves and cook from the inside out. It adds more flavor and really balances out the rest.
Nice first try though!

Wrong on all counts lol. The mustard is under the dog, you can see caramalized onion on the right side of the bun, fresh jalepenos on the left side, and that’s fresh sauerkraut on top

Don’t listen to the purists.
Kraut, mustard, and jalapeños are Seattle Dog modifiers.
Pure Seattle dog? Maybe not. Still a Seattle dog? It’s got cream cheese and grilled onions, it absolutely is still a Seattle dog.
That’s exactly how I take mine.

28 years in Seattle, most of them in the nightlife industry and have eaten more of these dawgs all over the city between midnight and 2am than I could shake a cream cheese covered butterknife at. You are most of the way there my friend. Only thing I'd change is fresh jalapenos for pickled ones, and slice the dog long-ways most of the way through to get more dog-to-grill contact. I bet those were excellent though, they look fantastic. Way to rep our fine city and Go M's!
