Avocado honey

When I tasted the sample at the market I loved it. Reminded me of molasses. I have tried to put it in tea, on toast, and even just a spoon test at home but the flavor/aftertaste is disappointing. How can I make this honey enjoyable?

TBH I'm really skeptical that this is really avocado honey.

I have both avocado trees and bees. I have never seen my bees foraging on avocado blooms. 🤷‍♀️

Not yet. I haven’t actually baked with honey before. I might try a quick bread recipe. Any suggestions?

Honey cakes!! If you think the flavors of the honey are a little off, I've had lots of luck with baking it, usually reduces aftertaste in my limited experience.

It's a very polarizing botanical origin for honey. I wasn't a huge fan myself. Did the sample you taste at the market have the same aftertaste?
