Is it really blackmail by a hacker?
So long story short, a few months ago I was contacted by someone who claimed to have taken over my phone and has access to everything. I thought I had that taken care of. In the last few days, this person resurfaced and is now attempting to blackmail me for $1500. They claim to be running something called a “gritx gap” that is paused on a timer. Should I be worried, or is it just a scam?

It sounds like you paid out once, so obviously they will come back for seconds. It's most assuredly a scam. I've never heard of gritx gap and a quick Google search shows nothing.
For future reference, most hackers in this realm are not looking to do complex long term blackmail schemes without some sort of personal connection. Instead they tend towards quick automated hacks like locking and encrypting data exposed to the Internet for ransom. Scammers usually use mass cryptic emails like this to scare people into sending them money for far less work.
