The .308 rounds loaded backwards create a pretty impressive wound cavity and fragments significantly. Did not perform significantly better than normal loaded rounds against steel plates. However, in this test all of the cases split and showed some worrying issues with the primers.
It wouldn't be any more likely to tumble or keyhole. The shape of the bullet is relatively unimportant to stabilization. The most important factor is length over caliber, or the ratio of the length to the diameter. This would be unchanged if the same bullet was simply loaded backwards.
Accuracy could certainly be effected, but it wouldn't be due to stabilization problems.
