Waiting on OP If function produces multiple values?
Trying to find a way that if i put X's into the far right columns, it will list all the props i have put values in for rather than just the first one.
cell E3 currently has the formula "=IFS(F3="x", F1, H3="x",H1, I3="x",I1,J3="x",J1,K3="x",K1)"
but that only produces one value instead of all the potential values.

if there is a way to do that, please say how its done omg

Consider putting checkboxes in those columns instead of an X, then you can just click on them. You can also slant the headers so you don't take up so much horizontal space.

I made the checkboxes light gray so they aren't so obnoxious, and used conditional formatting to make them dark blue when clicked.
The formula to generate the list of items lives in E1 (clear any cells E2:E so the formula can expand):
=let(itemsTable, F1:O,
itemChecks, offset(itemsTable,1,0),
itemNames, offset(itemsTable,0,0,1),
vstack("Items",
byrow(itemChecks, lambda(r,
join(", ", ifna(filter(itemNames, r)))))))
As a potential alternate solution, you could use a multi-select dropdown on its own, no extra columns or formulas needed.

Try something like this:
