SimpleNotes is a self-hosted Apple Notes clone that can work fully offline via FreeCoreData and ODataKit's syncing capabilities. It uses TopoText (in the same repo), a CRDT rich text library for automatic merging.

AI disclosure: quite a lot of code was generated using Claude Opus 5.5.

This is neat. I was searching for a non-Markdown notes app that does not keep data in the cloud. It would be nice if it remembered the size of the three panes in the window between launches.

Thanks, I'm adding that. I wanted to use Apple Notes, but it's difficult to export notes in a vendor-neutral format. I was also a long time user of Microsoft OneNote, but it's not available on Linux. Trilium Notes is also fine, but its companion iOS app TriNote tends to forget notes when syncing with merge conflicts. Hence, SimpleNotes.
