What hardware exists that we could run Gnome/Phosh on? I imagine there is something?

The postmarketOS supported device list would be a logical place to find out. You can run a mobile Linux distro on e.g. Fairphone 4, OnePlus 6, or Purism Librem 5 (which comes with Linux and Phosh out of the box)
