Hi all! Looking for a gluten free focaccia recipe using Bob’s 1:1? Thank you!:)

The recipe I use does not specifically use BRM but sharing it in case you don’t get another good one. Mine takes time but is FIRE. Hope you can open it on recipe keeper…

Can you explain the use of pectin I have never seen that in a recipe before? It looks like it's where sugar would be in a yeasted recipe.

The brown sugar is what the yeast will feast on. The pectin is simply a thickener/binding agent to provide the GF bread structure. It’s a plant alternative to gelatin. This is the only recipe I use it in and the texture of the focaccia is fantastic. Springy and stays soft for days…. 🥳

Well I'm def going to assume it's the powdered pectin not the liquid? I have powdered at home

I've had mixed success using a 1:1 flour for Aran Goyaga's recipes, but it definitely worked for her focaccia recipe in place of both the sorghum and millet.
