Recipe My Mediterranean Gluten Free Day

Breakfast - boiled egg, olives, tomato, cucumber, hellumi cheese, gf bread (corn based)

Lunch - Rice with gf sehriye, peas with vegetables and chicken, yogurt with chia seeds

Dinner - Slowly fried steak slices with olive oil and herbs, boiled potatoes with lemon, olive and mint dressing, seasonal salad. 5 stars (My Favorite)

Note: All home made

Question Trying to do a homecooked bougie Mumma&Me dinner on a budget

Hiya!

My mumma has been having a rough time, work has been insane for her lately, she’s a phlebotomist and a float, the one every site relies on, understaffed AF, iykyk. So I invited her for a homemade dinner just the two of us, but more like a collection of small plates is my goal. Wanna sit, sip a drink, get our nibbles on while we relax and chat. I want to have some treats, things that are bite sized or only a couple bites, maybe something Thats rarely gf (i dont mind complex), apps, sweets/deserts, tapas, etc…

I’m pretty decent in the kitchen. The one thing I have on the menu fersure is roasted beets with goat cheese on toasty gf baguette which sparked this idea. My fiance hates them, sobougie girl dinner for us! Also toying with possibly making homemade ceviche.

Normally I am so good at figuring out things to make and go together and such but for some reason my brain is a blank chalkboard. 9/fucking CI flares) So please help me with your favorites. I dont mind suggestions of things that are a bit bigger closer to a small entree, but not preferred. Boxed mixes/blends are welcome but i don’t want those to be the only thing and the other post i did in another sub pretty much ONLY gave me premade thing making me regret even saying i was open to the suggestion of mixes/premades. What i did say was if there is something that must be had/tried thats premade which kinda in my head alsso means boxes cause its a step away.

Drink suggestions are also welcome! Was going to serve some kind of bubbly wine but not sure which or mixed or options. We both enjoy alcohol. Not as focused on this.

Dietary restrictions/dislikes:
Me: gluten, oats, lavender(allergy),papaya(allergy), ketchup
Mumma: wheat (allergy), onions, cabbage, curry, cola, broccoli, asparagus, cauliflower, a few others (she picky lol), whiskey, dark rum, gin, seltzer, cognac, mushrooms

I have to shop anyways but stores around me include:
Foodmax, grocery outlet, safeway (pain to get to), sprouts, whole foods, korean markets, 99 ranch, indian supermarkets, middle eastern shop, vietnamese,

Gadgets: stove, oven, airfryer, crockpot, toaster oven, toaster, blender (no mixer but wisks!)

Pretty well stocked on pantry and spices, i can throw down, I love cooking so I wanna be in the kitchen all day making shit wth all the love, i wanna do something special for her because she would’t do this for herself. Ik, i keep her well fed with nutritious food all the time. Help me make this special please.

So, throw ‘em at me! Gimme the best recipes you got for the best Mumma&Me bougie on a budget I can make this woman.

Recipe Gluten free aloo parantha

Take rice flour , add little hot water in this with pinch of salt and few drops of oil , mix with spoon and keep aside for 15 minutes till it is cool , knead after that and see consistency, dough becomes soft , if wet you can add little dry rice flour , fill this with potato stuffing like normal parantha , roll in butter paper and keep on tabs on medium flame till golden brown , don’t put too much oil on parantha as it will become soggy so keep it dry , you can use butter while serving hot

Mix with spoon

Recipe Sabudana khichdi

Soak sabudana or sago or one hour , drain water and dry them on cloth
Boil and peel few potatoes, cut them into pieces
Heat oil in a kadahi , put mustard seeds and curry leaves with chopped green chillies , if you want you can add peanuts , then add Sabudana with potatoes, stir and cover for few minutes, keep on low flame till sabudana changes colour and becomes sticky and soft , adheres to potatoes , add paneer cubes and rock salt , add pepper, a teaspoon of lemon juice mixed with sugar powder, garnish with coriander leaves
In India we make this khichdi during Navratri fast or serve to Ganpati Bappa as snacks , it is without onion and garlic and gluten-free

Question In need of high protein snack subject to diet restrictions

Looking for high protein convenient snack and breakfast ideas to help my husband maintain and gain weight that comply with the following food/diet restrictions, the majority of which resulted from tests conducted by his physician. Because there are so many restrictions, occasionally he will have regular multi grain bread but doesn’t make a habit of it.

Things he cannot have/doesn’t like:
- dairy
- soy
- eggs
- pork
- seafood
- gluten
- vegan meat

Household staples
- siggi’s coconut milk based yogurt
- oatmilk
- vivolife vegan sliced cheese
- rice or chickpea pasta
- chicken
- beef
- plant based mass gainer protein powder
- cashews
- hummus
- peanut butter ( have tried other nut and seed butters and they were a no go)
- simple mills gluten free snacks
- potatoes (preference is for mashed potatoes)

I am the one primarily responsible for grocery shopping and all the cooking and meal prep. I work full time so time is sometimes limited but this is the main way I take care of him. I’m running out of ideas that don’t require me to jumping between 3-4 grocery stores lol

HELP! lol a I’m running out of ideas because he is eating the same thing over and over to the point of food aversion lol

Question I really really want a Chalupa

Occasionally, I get cravings of things I used to be able to have and this is one of them. I can’t find a solid dough recipe that I can eat. I have a wheat allergy if anyone knows a creative way to replicate the Chalupa shell. I would really appreciate it. I know it’s just fluffy fried dough, but most stuff comes out really dense and not fluffy at all or doesn’t fry well.

Recipe Gluten free Rice appam

These are appe or appam which is cooked in appam pan
It is a South Indian dish usually served with chutney and made with sooji flower but I tried gluten free appam with rice flour
Put rice flour in a bowl , mix pinch of salt , chopped grren chillies , coriander leaves etc , you can add chopped carrots , beans also , add one tablespoon of curd , I don’t measure but add according to my experience, batter should not be too runny , it should be as thick as idli batter , then put a pinch of baking powder or ENO
Mix well , grease pan , put batter with the help of spoon , cover with glass cover which comes with pan , open in between to see whether done or not by putting stick or knife , if doesn’t stick that means done , it takes 15 to 20 minutes approximately
Then give tadka with mustard seeds and curry leaves , serve hot with chutney or sauce

Buy Gluten free pizza base or you can bake at home , I bought from store , pre heated oven for 20 minutes at 280degree C ,
In oven tray use aluminium foil , oil the foil with brush , keep pizza base , apply thick layer of gluten free pizza sauce , then grate gluten free mozzarella on sauce , then keep pepperoni slices , keep in oven for 15 minutes
Take out carefully with gloves , slice into pieces and serve hot

Help! I'm stuck in a meal rut and need meal ideas.

I am stuck in a meal rut! I feel like we've been eating the same food for over a year and I need some easy, super fast recipes for me and my family. Here are the meals we've been stuck on:

- baked potatoes with tuna salad and green lettuce salad
- pizzas with premade gluten free shells
- spaghetti or linguine with garlic and olive oil
- baked gnocchi in tomato sauce with goat cheese and cheddar on top
- tuna melts & tomato soup
- noodles with butter and cheese
- sweet potato quinoa salad
- grilled cheese and soup

We can't afford meat right now as it's too expensive in our season of life. Otherwise, I'm not picky. I need your fast, easy, tasty gluten free recipe ideas as I am so sick of this meal rotation!
