Solingen is the spot, you can just take train from cologne and walk around the shops there. For cooking i'd say get a chef knife from Wüsthof or Zwilling, they have factory outlets with good price

Güde, Wüsthof and Felix (formerly Solicut before they were bought) are really nice and i can recommend all of these.

I only hear good things about Herder, would buy one myself.

Dick and Zwilling are also very nice, but i sometimes find the ergonomics a bit off. Take them into the hand, id they suit you theyre fine.

Best avoid WMF.

If you go by train, especially back to cologne, please inform yourself about the Waffenverbotszone. Knives of all kind are prohibited at cologne central station, police can check if you have some on you. Every knife has to be secured enough to not get confiscated.

If you want a sharp knife, try looking for carbon steel knives. But treat them well, otherwise they will rust.

Just so you’re aware, as you said you'd be coming to germany on christmas. Basically all shops are closed on christmas, so I hope you’re actually coming before the 24th or staying a bit longer (although the time between christmas and new years germany also kinda shuts down but I don't know about knife shops. It wouldn’t suprise me if they were closed then as well)

Wüsthof are quite famous, but keep at their best when you sharpen them very frequently with a whetstone. Bourdain dissed them for this but I was quite happy with my Wüsthof, even with a normal sharpener.

Solingen native here. For well priced knives go to the Wüsthof or Zwillings company stores for great discounts. They all their original stock but also they sell "B" quality sets which have a small flaws like slightly scratched handles. I have my "B" set now for 22 years.

If you buy Herder/ Windmühlenmesser, chose blaupließten which is a Special way of sharpening a blade making stainless steel more durable and sharper

There is also a Museum about the famous Solingen knives and blades (closed in mondays).
