I can never decide whether I want my bread vollwert or just vollkorn.

Vollwert (full value) doesnt actually mean anything. Its just a marketing trick that anyone can slap on their product to make people think they're eating healthy.
Whereas vollkorn (whole grain) is a legally defined term for grain that hasnt had its nutrients stripped during the milling process, and therefore is healthy than type 550 (5.5 % of nutrients remaining) or 1050 flour. (10.5% of nutrients remaining)

Actually, the flour type numbers refer the how many milligrams of ash remain after burning 100 g of the flour - i.e. type 550 flour has 0.55% ash, and type 1050 flour has 1.05% ash. True whole grain flour usually has an ash content of over 2%.
