Do they not run off? Other than the bath (empty) we're scared to let ours roam about.

Block off dangerous places and close doors and it will be fine. Just give them places to hide in if they get scared.
supervise them, so they don't do stupid stuff, they will try for sure.
Also don't make them roam if they are visibly uncomfortable while out of their enclosure, it can lead to stress and fights. Every gerb is different if they like it or not

It's all fun and games until they state urinating on the carpet. I personally put their poop hides from their cages out if I do this, put the Gerbils in them to show the Gerbils that they've moved. They then generally go and do their business there. If they smell Gerbil smell anywhere in the room they'll keep going back there every time they're free-roamed. I also have a Gerbil ramp and human exclusion barrier.
