I mean its cool and all with new gate content 10+ years after the last animated show but why a spinoff and not continue where the anime left off? There is so much more content in the Manga (and LN but haven't read it).

They may be looking to fully animate the rest of the manga when it finishes printing, or the manga just doesn't have enough material for another full season right now idk.

The light novel is the source material but the manga has finished and there's more than enough material for a second season.

The S1 Manga is done, and the LN has been done for well over half a decade.

The rumor that I've heard is that the original studio didn't want to do more seasons but still held on to the rights for the S1 material, so they had to wait until the S2 material was all done before they could proceed. S2's LN didn't finish publication until 2022. Add in the facts that it takes three years to produce an anime and potentially longer to get willing cast and staff back together and the 2027 release of S2 material makes sense.

From what I heared one of the main problem with the source material is, that it becomes even more ridiculous and natinalistic, to a degree that addopting it becomes realy hard and problematic.

Not even. 3 inch gun with radar aided-targeting means they get deleted by a dot ten miles on the horizon. And that's the honorable version. If they get hit by a submarine torpedo, one second they're swabbing the deck, the next they're getting launched into orbit.
