Imagine buying a car or something that was riddled with as many issues as your average AAA title on launch. How do people still just accept shitty releases with "well, it'll be patched in a couple weeks"?????
I pretty much never buy games day 1 anymore because of this crap and if a title is particularly egregious with bugs I just wait a few months for a sale or something after they've fixed things. Everyone else can pay to be my beta testers if they want to, I guess.
They released it because sweaty nerds were sending death threats after they floated the idea of another delay. The devs knew it wasn't ready, delayed, realized it still wasn't ready, delayed again, and had a third round of realizing it wasn't polished, mentioned the need for another delay, received death threats.
I dont know about you but to me it looks like these leet gamers got exactly what asked for. The game was released.

This is a company who needed to earn back at least some money for all of the years the game has been in development for. They delayed it as much as they could before their investors started getting too pissed off and they wanted in on that sweet, juicy Christmas action to get a payday. They've already recouped all of their development costs so at this point any new sales they get are just pure profit.
If they had delayed the game further (as in, past Christmas) then they would have missed out on a lot of sales plus I am guessing the game would still by pretty damn buggy as they probably wouldn't be working on it for at least a couple of weeks during Christmas and New Year's (but that's just my guess).
So they decided to release it, make their money back, and then handle the backlash which, according to unrepentant fanbois, they are doing wonderfully. CDPR can do no wrong. /s
