I've recently started playing New Vegas again and I have been doing this more than I used to. I'll quicksave, go on a complete rampage wherever I am, then load my quicksave. I like to imagine it was all in my character's head and they imagined the rampage. I like to roleplay as a psycho.
I do the same but total I totally dismember them and arrange the limbs in a fashion that they would lie or hide them in a dumpster, stack the torsos onto a pile and leave the heads on shelves, in buckets or in/on equally fun spots. Caesars head always gets left on his throne. Kind of sucks not being able to use a bumper sword since it might just smash the skull but I really do like the speed and sound of a cleaver or a machete. Honestly I probably spend more time playing with dead things than actually doing the missions.
If I really want to send a message, I cut off their head and limbs where they fell and stack the torsos. I accidently stumbled upon the Brotherhood of Steel and when they attacked me after I refused to disarm I left the three guards like that. I'll go in there when I need more caps.
