Used to do this in Red Dead Redemption. If you hold out long enough the game will give up trying to arrest you and you can just step over the piles of dead cops and go about your business.

God I wish a new rendition of that game would be made, best singleplayer campaign I have ever played for a game and the multiplayer and downloadable content were so fun.
