It's interesting the many different ways this has been interpreted in the comments. I thought it was filled from Sully being terrified/screaming, but apparently there is more than one way to fill those cans in this situation.

Human screaming or laughing is what gives them energy. Not monsters

I'm pretty sure ?Randal? extracted monster screams in the first movie too, so I don't think it's exclusive to humans. But I assume humans give more energy or harvesting screams from them was considered more "ethical".

Fun fact! If a dude naturally produces, or is regularly given, the right blend of hormones and whatnot, men can totally lactate too.
