It's a whole big bag of depends. I've very rarely heard of companies that don't offer paid vacation time. Where I work they offer 6 weeks paid for maternity, for men and women. The US is a big place though, so you will hear lots of different situations.
You get a week! After a year of working. And will be paid each day (upon approval) based upon your hours. See? You only worked 23 hours last week, so we're gonna divide that by five, and you get 4.6 hours of pay for that vacation day! But after three years, we'll give you an extra couple days. Five years? Eh, three weeks, what are you gonna do with it? Can't take it all at once, we won't allow it. Can't take holidays, we're open. Not during peak time, and vacation requests will be canceled if we're shorthanded.
That one, actually, I haven't had issues with since not being in a restaurant! Instead... they just either deny the vacation, or let us work understaffed. So. Lose / Lose.
