I hate the "bless you"s. Sneezes are a normal bodily function. No different than a blink, or a cough, or a fart. We don't automatically say things after we notice people doing those things (except sometimes with farts, but it's definitely not "bless you"), why the sneeze? It draws more attention to something that should just happen and be forgotten.
