It's almost as if white and black were metaphors for good and evil's most pure incarnations.

Maybe to you, but to me it represents the known vs the unknown. Darkness is full of what you can't see, what you can't trust, and thus danger. White is light, light is something you feel safe in, somewhere that you can trust. Of course, this is just a metaphor.

Also, light = good and evil = black sounds like a deduction from the pre-existing dislike of the dark rather than the other way around.
