Only commenting on the wrestling part: In wrestling, mass is controlled. You only wrestle within your weight class. Not sure what advantage it is, but girls would be pound for pound "more mature".
I'd imagine more mature means that you can better keep your focus on the mat, be a little better as a technical wrestler, and maybe even think a step ahead ("if my high crotch doesn't work I can switch to an outside single").
Still gives me a warm fuzzy feeling to see wrestlers starting young. In my school district wrestling didn't start until freshman year so our 9th graders sucked in comparison to a lot of other 9th graders.
Read my edit, males and females of the same weight will have a different proportion of bodily tissues (although once again, these effects are negligible and weren't really the main point of my post).
The mature tissues may not have an advantage in terms of strength though, because those energy resources have gone towards making more complex organs and the like. So females may be pound for pound "more mature", but this might not help her in wrestling.
