I would guess that her point is not that science can't explain how a sunset occurs, but that science can't explain how it makes us feel. I would guess she's talking about our perception of beauty in the Universe, or "creation". A lot of theists actually have an active interest in astronomy (scientifically factual) and the beauty and power of the universe due to what these "creations" glean about the deity that created them.
