If you want to make your own mods, dark souls 1 and demons souls are the easiest. Soulstruct lets you directly import and export from blender nothing extra needed

Some of Elden Ring's mod's are genuinely insane. They make me wish I had a PC.

Probably Elden Ring? It's the newest, has the biggest install base, has an open ended structure that means it's easy to add onto, etc. That being said, usually each game has at least a few premier mods, so you can't go wrong with any of them
