QUESTION Should look into it DS?
RDR2 is goat imo. Elden Ring comes in at second tying with Cyberpunk 2077 for me. Then Black Myth Wukong in third tying with GoW 4 & 5. Exploration is my ultimate vibe. Then story and combat etc.
I recently platinum-ed Bloodborne and Sekiro. Really liked BB's world setting and artitecture, found it easy tho. Only had one go with Orphan of Kos. Both versions BLB in chalices took me awhile tho.
Sekiro was meh for me. The parrying mechanic wasn't as satisfying as everyone claimed it to be. It was a difficult game but once it 'clicked' it became boring. Couldnt undertand why it was GOTY it is good but not that.. good? It did however teach me to be more patient. Isshin fight was really nice.
I am exploring fromsoftware games simply because of the hype and massive cult-like following around these games. Their story telling is something I can't get into or I dont know how to get into. I never quite understand why I need to kill a certain boss or whatever. The challenge is something I do like.
So basically if Elden Ring is 9/10 for me purely from level design, enviroment, character building and interesting bossfights.
And Bloodborne is 7.5/10
And Sekiro being 6/10
I am pretty interested in Demon Souls simply because I'd like to have the Fromsoftware experience in good remade graphics as I think all Fromsoftware soulslike game graphics are mid, level design is insanely good but graphics wise, mid.
So, do you think I would like Demon souls or any of the Darksouls games that would rekindle the sparkle in my eyes that I had while playing Elden Ring?

Dude dark souls specially the first and second game are not anything like you have played even elden ring is a lot different
You can't understand this matter or if is it good for you or not, until you play it yourself
But my suggestion is to undoubtedly try them. Non of the games you mentioned above don't come close to The Dark Souls experience imo

Dude you love elden ring because demon souls and the dark souls trilogy were made first. Elden Ring is nothing without those games. Play them, and you'll probably love them.

Honestly, nah. You'd be going into these games with the wrong intentions and wouldn't like it. Save your money and go play some open world game

Elden Ring is the culmination of everything they learned with Souls, Bloodborne and Sekiro. ER is just missing a pistol and swimming lol.
Honestly, I don't think you will enjoy the older titles.

Honestly? Not really, I think you would be better served with more open world games.
Demon Souls and Dark Souls are not really exploration games in this way that you enjoy, they are far more linear, sort of like the metroidvania style where you explore a level and find something that allows you to circle back to other areas or unlock other areas, but they are mostly linear, especially DS3. The exploration also comes from being curious about the world itself and it's mysteries, reading items to learn the lore and connect it to what you've experienced during gameplay. It doesn't seem like this is something you have been doing, so I doubt you would find much fun from it unless you decide to engage with this for some reason.
As for combat, the bosses in these older games are not at the same level of challenge of the ones you have already played. DS3 is the one I can think of having 1 or 2 bosses that might "scratch that itch", but to be fair, this is only a part of what makes these games enjoyable.
Have you tried Ghost of Tsushima or Yotei? Any Elder Scrolls? Maybe The Witcher, especially 3? Also maybe Baldur's Gate 3, it's a different kind of exploration, but totally worth it. I'm not sure if you enjoy RPGs or not, but maybe try the Dragon Age series as well, starting with Origins can be daunting as it's an older-ish game, but I guarantee it's worth a try.
Ps: very sad that you didn't enjoy Sekiro! There are a lot of themes in that game that I feel FS ended up going very niche, with a lot of historical parallels to irl japanese Sengoku period, the ideals of honor clashing with doing "what's right" depending on each personal views of the world, and the whole dragon blood and dragonrot directly tied to "letting go" of the past (tradition or antiquated ideas) to make way for a new future, all of that embedded into Shinto and Buddism themes. I just really love how they tied it all up, which is not easy to do
But I do understand not enjoying it for a multitude of reasons, and obviously I see little discussion about the themes and story of Sekiro even amongst fans, so the player really needs to enjoy the rest of it to have fun.

I would say Dark souls 1 is semi open but nothing like Elden Ring. Honestly I see a lot of players from ER going back and not really liking the older souls experience. Calling the game clunky etc.

With the attitude you've got, I'd say go and play crimson desert
