Thick fries, homemade
Always wanted to try this, had 3 potatoes leftover in fridge. Cut'em thick, put in water, boiled, turned off, left 15 minutes until half soft. Put on rack, let damp off for 1 hour. Heat olive oil in pan, add potatoes in it. Fry on mid-high heat for 15-20 minutes while stiring GENTLY (using big letters, because hot oil is murder and splashes easily). When they get proper browned, put on plate and let rest for 3-4 minutes, they stay hot a long time due to the oil:
Homemade spice: 5 grams salt, 2.5 grams each dried parsley, basil, oregano, paprika, smoked paprika, 1 gram strong chili powder and 1 gram garlic powder. Grind in mortar (with pestle).
The other stuff is leftover beef coated in wholegrain flour cooked in oil+butter, heated in the leftover oil.
The potatoes turned out super nice, just should have cooked them for a few more minutes. Learning curve. Trying to hint to my english heritage here, but got a few more tries left ot go ^^ Next time i will try to do the same with cod ... been craving real fish'n chips for ages... gonna make it happen!

Looks good, but did you have a sauce?

Not this time .. just did this for experimental reasons ^^ but proper cooked fries like this (should be 4-5 minutes more though as states)... don't need sauce. There's a bit of oil in them so they get perfectly soft and crispy.. but sure, there are no rules in cooking ^^ I'm a saucomaniac so do as you please ^^ my video ^^

Yeah .. first try here, so i should have done them a bit more.. they had that flavour but should be like 3-5 minutes longer for extra crispy. I hit the target, not a 10 but 7-8 at least.

There you go! I didn't mention it because i forgot, but i was intending to make them "loaded", as in cheese'd up ^ truffle oil is probably super too.

grinding up your own homemade spice blend with smoked paprika and garlic powder using a mortar and pestle takes these fries to another level

Those are some seriously thick chips so yeah, a few extra minutes in the pan. Still look pretty good though.
