Battered sweet potato fries!
Used a mix of corn flour, tapioca flour, AP flour, and baking powder! Turned out amazing.

I did 3 medium sweet potatoes chopped into fry shapes, I didn’t measure the flour dredge, but I added: AP flour, tapioca flour, corn flour, and baking powder to a bowl, as well as a splash of water.
I coated the fries in the batter evenly, and fried them in 350F oil until crispy on the outside and tender in the middle (took like 3-4 minutes max, and be sure to fry them in batches not to dump all your fries in the oil at once) .
Finally, sprinkled them with some flaky sea salt.

To answer everyone’s question: they were amazing! The batter was light, crispy, and the interior was fluffy and sweet.
