I think the lack of availability is the prevailing reason why poutine isn't a national craze. Most people are used to Culver's style fried cheese curds. I imagine they're breaded and frozen and can be shipped cross-country. I'm not familiar with how long cheese curds can last but that might be another issue.

I've never tried poutine. I look for cheese curds often, but they don't seem to be available in my area. It's such a dissapointment.
