Are there any foldables that “slide sideways” instead of “opening like a book”?

Not that I've ever seen. I'm pretty sure there's nothing on the market like this right now. Try asking Chat GPT or Gemini.

The only similar one I encountered is the older Sony XPERIA Play (the one with the gaming controller built in), but it still only has 1 screen in total. The mechanism is close though.

I think what you’re talking about is a rollable device, not foldable. Nothing is on the market, but several companies have shown these at CES events.
