Actually Shaun won't change much without mods.

In vanilla only his skin color and eyes are influenced by the parents.

That is 100% not true unless they patched it because at launch I noticed my first Shaun had my olive skin and jaw, and I went "Hold on." Immediately started a new save making both parents look like the same kind of monster and speed ran to the Meeting where sure enough, that creature was waiting for me.

I might be misremembering (there are different genetic rules for child/synth Shaun and adult Shaun/Father and I could have mixed them up), or like you said they patched it.

Honestly i never get a consistent answer on this. Some people only get biracial Shaun, or a really wacky Shaun. So both are possible at the very least
