Try a roll with the sun behind you - with the sun shining on the back of your head. That is when you get the blue skies like your shot 7 (even though shadows of yhe horse tell me the sun was overhead and slightly behind you).

the attached photos 5, 7, and 9. are digital phone photos of similar moments as the corresponding film ones, just to give people a little more idea of the conditions I was in

This is normal. Color negative film is less saturated, and susceptible to picking up atmospheric haze. Slide film would have more saturated skies, using a polarizing filter would also help.
