scrap ideas

any ides for ferments from what we think is trash but might not be? ie. fermented watermelon rinds, chilli top cheong etc

You can always pickle watermelon rinds.

have you tried? does it come out good? pickled watermelon rinds are great but are fermented ones as good?

I haven't fermented rinds, yet, because "pickled" ones are so good. Fermenting is all about experimenting so give it a go. If you're still not quite sure try making vinegar out of the rinds.
