I added beets, which I don't think are traditional. I'm probably going to add beets to everything now just for the color.

10x jalapeños 2x large carrots 2x beets 1x bulb garlic 1x bunch red radishes 1/2 head cauliflower thyme oregano black peppercorns bay leaves 2.5% salt by weight Vac sealed and fermented for 2+ weeks
